chilaquiles!

chilaquilesMy weekday mornings are usually the same-old, same-old. Come into work, make myself a bowl of my favorite high-fiber rabbit pellet cereal and then start my day. On this particular morning, though, the wind gusts were high, the rain was driving sideways and my hair was thoroughly soaked upon entering the office. I needed something that would make my belly warm, something like chilaquiles. This Mexican comfort food classic is so simple to prepare. Just heat 1 teaspoon vegetable oil in a skillet over medium-high heat. When hot add 1/3 cup of your favorite salsa and cook for about 30 seconds, swirling the pan. Add a couple of handfuls of tortilla chips and toss to coat. Serve over refried beans or a a fried egg and a garnish of cotija cheese.

    I love this recipe-I used to serve these at a Mexican restaurant in Bayview where I waitressed, but I never saw how they made them taste and look this good!Now I am going to try it!(I waitressed in the non-smoking section which became the vegetarian section too with great dishes like this-)

    i would like to know how to get the burnt taste out of my tomato sauce. help.........

    Hello Jackie!
    Sad to say, if you have burnt your sauce, there is very little you can do to save it. You might want to try a little bit of sugar to see if that might help with bitterness, but, sadly, scorching the food is mostly not fixable.

    This is my favorite Sunday breakfast! My Mexican mom would make her own tortilla chips, and of course, canned beans are a sin in my family. So the refriend beans are homemade too. But we always make them with salsa verde... yep, homemade too. Your version is just as good and super easy. I've shared my family's recipe in my e-book.
