There's no better month to feature a maple cookie than November.
My first thought was to do a maple sandwich cookie; a maple cookie with a maple cream cheese filling. In testing I found that there was no way to get the filling to taste “mapley” and still be stable enough to hold up in a sandwich cookie. After some discussion with my fellow editors in the test kitchen we decided that the best solution was to concentrate the flavor of the syrup by reducing it down to a glaze. A touch of salt sprinkle on just after glazing enhances the maple even more. Voila – a beautiful and tasty glazed maple cookie!
